This is a type of mian xian noodle. Normally mian4 xian4("thread noodles") are servved in a big soupy vat. This type is a dry version called 雞汁 麵線 Ji1 Zhi1 Mian4 Xian4 (Chicken Juice Thread Noodles, roughly, though the "juice" is actually chicken oil). It is fascinating to watch Mian Xian being made. Take normal sized noodles and stretch them between two sticks and do it again and again until they are really thin, then hang outside to dry.
